Dr Christen of the Harvard Medical School and his colleagues tracked the eating habits, supplement use and risk of cataracts in a study of 35,551 women health professionals for 10 years. Women who consumed high amounts (about 7mg a day) of the antioxidants lutein and zeaxanthis were a 8% less likely to develop cataracts. Than women who had low intakes.The large amount of lutein and zeaxanthin reflects a large consumption of vegetables and the amount is comparable to high powered supplements.
Women who had the highest vitamin E intake from foods and supplements 262mg or almost 400IU daily were 14% less likely to develop cataracts compared with those women who’s intake was low. That amount of vitamin E is almost impossible to consume in food alone so it was assumed that they were taking supplements. The researchers also found protection from eating large amounts of leafy green vegetables, particularly raw spinach,kale and beet greens.. Other vegetables and fruits with orange or Yellow skins are also good sources of lutein, vegetables like carrots, squashes, sweet potatoes and oranges.
